Welcome to Meatless Monday where every Monday I introduce you to a new recipe. This week I thought I’d switch it up and share a sweet treat with everyone.
At the beginning of the Summer, my daughter and I created a Summer Bucket List. The truth is, I suck at documenting everything her and I have done together. Eventually, I may get around to sharing everything, but one of the items on our list was to make homemade popsicles (or I guess technically ice cream, eh close enough).
When my husband and I decided to give up sugar a few weeks ago, I thought this would be the perfect opportunity to make popsicles with whole fruit to help curb our desires for ice cream or froyo.
I love this recipe because it’s vegetarian/vegan-friendly, is easy to make, and only has three ingredients. The bonus is they, and they are delicious, and everyone in my house likes them!
From cleaning the strawberries to sticking the popsicle molds in the freezer took me about 10 minutes. These popsicles are perfect for a hot Summer day and a healthy alternative to otter-pops or ice cream. If you like Strawberry then these popsicles are a must!
Strawberry Lime Popsicles:
- 4 cups of Strawberries
- 1 Lime (1/2 the lime I juiced and the other half I cut into chunks and threw it with the strawberries)
- 1/4 cup raw honey
- Add all ingredients into a blender.
- Blend until smooth
- Place strawberry lime mix into popsicle mold
- Stick in freezer
- Should be ready to enjoy in about three hours
