Soba Noodle Stir-Fry is a healthy and easy meal. It’s the perfect recipe when you have vegetables but have no idea what to make.
Happy Monday, last week I announced every Monday will be dedicated to Meatless Monday where I create a healthy, well semi-healthy meals which are easy and delicious. This week on the menu is Soba Noodle Stir Fry.
There is not much I’m overly passionate about in life, but animals are one of them. I was a vegetarian for several years, and a part of me wishes I had continued the vegetarian lifestyle. Unfortunately, when I moved from California to Missouri my lifestyle did not mesh well with the Midwest, and I had an ex-boyfriend whose only goal in our relationship was to get me to eat meat.
Within two months of moving to Missouri, I gave up on being a vegetarian. However, in 2009, I watched a documentary, Food Inc and instantly stopped eating pork and beef because I adore cows and pigs and can’t stand their living conditions. I’d love to be a vegetarian again, but my husband, and I already struggle to find meals, so I continue to eat chicken and turkey and try my hardest not to think about the conditions.
I’ve wanted to cook with Soba Noodles but I’ve never had the ingredients for the recipes I pinned on Pinterest. Before I went on vacation, I had a crazy idea, creating my own meal. I figured this will either be amazing or a disaster but since I had vegetables that needed to be used I decided to give it a whirl and you know what, my soba noodle stir fry turned out legit!
This meal is awesome since it can change every time you prepare it since you can use whatever vegetables you have. I love a good stir fry, and my Soba Noodle Stir Fry exceeded my expectations. It was full of flavor and I went to bed feeling extra healthy due to all of the vegetables on my plate.
Please note, since I made this on a whim I did not measure anything out.
- 8 oz of Soba Noodles
- Coconut Amino (or soy sauce)
- Vegetables of your choice
For this recipe I used:
- Red, Green, and Yellow Peppers
- Cook Soba Noodles
- While noodles are cooking, saute vegetables. I usually start with onion, carrots, broccoli, celery, and peppers. Saute for 2-4 minutes
- Add remaining vegetables except Kale and cook for 3-5 minutes until tender
- Add Kale saute for 2-3 minutes.
- Drain Soba Noodles and add noodles to vegetables.
- Top with coconut amino, turmeric, and pepper.
